Banana & Cherry Pie

Ingredients :
  • 2 medium bananas (400g)
  • 6 organic free range egg whites
  • 1/2 cup (125g) coconut oil
  • 1 cup (120g) banana flour
  • 3/4 cup (165g) coconut sugar
  • 1/2 cup (80g) brown rice flour
  • 1/4 cup (40g) quinoa flour
  • 1. tsp ground cinnamon
  • 1/2 tsp gluten-free baking powder
  • 4 strawberries, sliced thinly
  • 1â3 cup (15g) desiccated coconut or flaked almonds
  • Coconut oil for greasing.

Make it happen :
  • Preheat oven to 200oC.
  • Greese pie tray/pan.
  • Line base of pan with baking paper & coconut oil.
  • Thinly slice half of one of the bananas.
  • Mash remaining banana in a small bowl; you will have a cup of mashed banana.
  • Whisk egg whites in a medium bowl until frothy. Add coconut oil, ground almonds, sugar, mashed banana, sifted flours, cinnamon and baking powder; whisk until combined.
  • Divide mixture evenly into pan.
  • Top with sliced banana, strawberries and desiccated coconut.
  • Bake friands about 25 minutes.
  • Stand pie in pan for 5 minutes, before transferring onto a wire rack to cool.
