Step 1 - Preheat the oven to 200 C. Peel and cut potatoes into even-sized pieces.
Step 2 - Place into boiling water, or steam, for about 10-15 minutes until the outer edges are fluffy. Drain and shake in the pan.
Step 3 - Pour coconut oil over the potatoes and shake to coat. Place in largest roasting tin and sprinkle with Himalayan salt.
Step 4 - Roast for 50-60 mins then turn, pinch to create crisp edges. Leave to cook until golden and crunchy.
