Banana & Fig Loaf

Ingredients :
  • 4 bananas
  • 4 eggs
  • 2 tbs raw honey
  • 1 tbs vanilla extract
  • 1/3 cup of coconut oil melted
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 1 cup banana flour
  • Carton of blueberries
  • 3 Figs
  • 1/4 cup of dessicated coconut
  • 2 stems of rosemary

Make it happen :
  • Preheat your oven to 180 degrees
  • Stick blend the bananas until they become a puree.
  • Add the eggs, honey, vanilla and coconut oil.
  • Continue to blend until combined.
  • Stir through baking powder and cinnamon.
  • Sift banana flour into the mixture, add the nuts and stir.
  • Pour the mixture into a lined loaf tin.
  • Thinly slice half the desired amount of fresh figs and lay on top.
  • Sprinkle with cinnamon and place some nuts on the top of the bread.
  • Bake in the oven for 30 minutes or until a skewer comes out clean.
  • Place the remaining thinly sliced fresh figs, desiccated coconut, blueberries & rosmary if desired for decoration.
  • Let cool and turn onto a wire rack.
  • Serve toasted with butter and fresh berries on the side!
